Our new small-batch beer is the Half Wit. The Belgian brewers from the Flemish city of Louvain in days past brewed a very special beer with unmalted wheat and malted barley that was known as biere blanche, or white beer. We call this style Belgian Wit. It is a straw, blond colored ale. A Wit has a “white” hue due to residual protein and yeast. Belgian Wit beers are sometimes scented with herbs and spices like coriander and curacao bitter orange. Typically, the bitter finish is low on the hop scale so as not to overshadow the delicate maltiness and slightly tart finish. Also notice the higher carbonation level which makes the Wit seem to “jump out of the glass”.
The Honey Wit is a variation on a traditional Belgian Wit beer. We experimented with non-traditional ingredients and techniques by adding wildflower honey to the fermentation which also increased the alcohol content a bit. You may notice in the aroma some floral/citrusy/fruity aroma. This complexity comes from the unique Belgian yeast, bitter orange peel and the honey.
